Mighty Maca Energy Bites
Maca, nuts, honey and dates... oh my!
Mighty Maca Energy Bites are the most perfect sweet snack you can eat while feeling good about yourself. These little energy bites are jam packed with so many healthy proteins, antioxidants, vitamins, minerals and that perfect sweetness that makes you feel like you're enjoying a tasty desert. I like to make a couple batches every week so I always have a healthy snack that satisfies my sweet tooth. Enjoy this delicious recipe below.
1/3 Cup Walnuts / Almonds
1/3 Cup Cashews
1/4 Cup Coconut Flakes + more for coating the rolled bites
1/3 Cup (packed tight) deseeded Medjool Dates
2 Tbsp Cacao Powder
1/2 - 1 Tbsp Maca root powder
1 Tbsp Raw Honey
1 tsp grated ginger root or ginger powder (optional)
1 Tbsp Almond/Organic Peanut butter (for binding if needed)
1 pinch sea salt
In a blender, add walnuts and cashews and blend to make a flour consistency (about 10 -15 seconds).
Do not blend too much or the oils will release from the nuts making almost like a nut butter.
In a large mixing bowl, add the nut flour, cocoa powder, coconut flakes, maca, sea salt and ginger. Keep aside.
Add 1/3 cup packed dates into a blender and blend until sticky dough like consistency is formed.
Add the dates and 1tbsp raw honey with all the other ingredients in the bowl and mix well to make a dough that you can roll into balls.
If the consistency is too dry, add 1 tbsp peanut butter so you can easily roll them up.
Make 12 somewhat equal parts of the dough and roll them up into balls.
Optional Coconut coating : In a bowl add 2-3 tbsp coconut flakes. Drop each energy bite into the bowl and roll it around so its covered completely in the coconut flakes. Looks so pretty!! :D
Store in air tight container and refrigerate. Enjoy for up to 3 weeks!
