Simple Chia Pudding that you can customize in so many ways !

So, since we now know that these little guys are obviously packed with powerful health benefits, its a good addition to anyone's diet. Vegan or not. We add chia to our smoothies, in salads, water and juices etc... but chia pudding is special!
It is a simple and absolutely delicious way to easily get the benefits of these powerhouse of nutrition and an the perfect breakfast food!
I would like to share a simple recipe that I make. It can be enjoyed as is, or you can customize it your own creative twist (ideas below).
So... with that said.... here goes!
Serving Size : 2-3
1 cup Chia seeds
1 cup Almond milk
1/8 cup Raw honey or maple syrup
1/2 tsp vanilla extract (optional)
1 tsp Organic Ceylon Cinnamon
For a smooth pudding, add all the ingredients into a blender and blend until smooth. Then pour into your jar for setting.
For a more textured version just add all the ingredients in a jar.
Place in the refrigerator for at least 4 hours or overnight to let swell.
Once ready, it should have a pudding like consistency. Add more milk if it's too thick. If its too thin, add some more chia seeds and let it sit in the refrigerator for another hour or so till it thickens.
Serve as is or with toppings of choice.
Pro Tip : If you’re adding powdered or pasty ingredients like vegan protein, matcha powder, maca powder, ceylon cinnamon, cacao/cocoa powder,PB/Almond butter, or the like, blend it with the nut milk before adding the chia seeds so that you get an even consistency of the pudding.
Some add on ideas for your chia pudding :
Protein packed chia pudding : PJ and I love to add some hemp protein to the almond milk before adding the chia. After the pudding is ready, we add fresh fruit, maybe some chopped nuts and some cinnamon.
Berrylicious chia pudding : Blend nut milk with berries, add chia seeds, refrigerate and top with more berries and nuts.
Date & Chocolate chia pudding : Blend nut milk with dates and cacao/cocoa powder. Then add chia seeds. Refrigerate. Once ready, add chopped almonds and/or vegan chocolate chips.
Organic PB/ Almond butter and Jelly chia pudding : Blend nut milk with 1 Tbsp Organic Peanut or Almond butter and 1 tbsp of your favorite jelly. Add chia seeds and refrigerate overnight.
Additional topping options :
Granola, Coconut Flakes, Bee Pollen, Dried fruit, Goji berreis, dried berries, hemp seeds ...the options are endless.. (make sure its serving your health)
